Recipe Name : Dendeng age (Yogyakarta)

Bahan yang diperlukan :

    450 gr daging giling
    2 lbr daun salam
    3 cm lengkuas, memarkan
    1 ½ sdm kecap manis
    4 ½ sdt air asam
    1 ½ sdt garam
    3 sdt gula merah
    750 ml santan dari 1 kelapa
    2 sdm minyak untuk menumis


Bumbu yang dihaluskan :

    8 butir bawang merah
    5 siung bawang putih
    1 ½ sdt ketumbar
    ½ sdt jinten


Sambal terasi :

    27 buah cabe merah keriting
    18 cabe rawit merah
    4 ½ sdt terasi
    15 siung bawang putih
    1 ¼ sdt garam


Cara membuatnya :

Dendeng age :

Tumis bumbu halus, daun salam, dan lengkuas sampai harum. masukkan daging giling. masak sampai berubah warna.
tambahkan kecap manis, air asam, garam dan gula merah. aduk rata. tuang santan. masak sampai kuah mengering.

Sambel terasi :

goreng cabe merah, cabe rawit, bawang putih, dan terasi. haluskan dengan garam
